These are the perfect combination of delicious and easy. It is basically a two egg sponge mix with no raising agents, combined with the same weight of chopped dates, and is so, so, so simple and quick.
100g/ 4oz soft margarine
100g/ 4oz granulated sugar
100g/ 4oz chopped dates
100g/ 4oz plain flour
1tsp vanilla essence
Preheat oven to 180 degrees.
Put all the ingredients in a bowl and mix together for a couple of minutes. (See, I said it was easy!)
Pour into a lined baking tin, 11 x 7 x 2in. I have a silicone one, so I didn’t even have to line it.
Cook for 20-25 mins.
Once cooked, let it cool in the tin. Then cut it up and eat it. Or store it in an airtight container if you prefer. Ours is all gone now. Yum, yum.
